ChrisJ, if easyJet is, in fact, basing decisions to terminate employees on the basis of sick leave then the airline opens itself up to legal action for Unfair Dismissal.
Why wouldn't you look at the overall sickness record? If you are repeatedly unfit for work, on numerous occasions, over an extended period, then you have to question whether they can do the job safely. Why would you let a healthy performing pilot go at the expense of keeping an unsafe unfit one? I'm more concerned about the dodgy practice of cancelling one part of a return flight and avoiding refunds, now that is wrong.
