Love this DIY and I’m going to give it a try. I’m confused about the 40mm o-rings however. I have a Anova knock off, but the stem is a uniform 60mm. I’d think it would make sense to use the same size o-ring inside and outside the lid to “clamp” the unit to the lid. Am I misunderstanding something?
The o-rings outside the lid are effectively just for aesthetics, but the ones inside the lid will actually bare some of the weight of the unit when the lid is open.
I found that the 60mm o-rings were not tight enough to hold the unit in place, as the lid leans back slightly further than vertical when opened.
The specific choice of 40mm is somewhat arbitrary, probably influenced by what I had on-hand at the time of the build. In fact, I have noticed that they tend to snap after a few months when used regularly, so perhaps 50mm with a thicker width would work even better.

For the "Fill the cooler lid with insulating foam" step, the plastic of the lid is actually thin enough that a strong enough light, like a shop light, desk lamp, or heck even a smart phone flashlight can let you see how well you're distributing the foam as you spray it in.
