Worried if i had to spend 2 hrs for preparing this crispy chips (which actually doesn't live more than 5 mins..).. pain is on drying each pc with towel / tissue - huh! but yes, i completely understand the steps i have to take enjoy the result. :)
@keethi, tht sounds simple. but does it help remove the starch? or is that really reqd?

hehehe..lakshu I was skeptical and tested if Keerthi was lying :P But today I tried her suggestions with cheppangkilangu(taro root). They worked awesome Lakshu! Crispy and stayed that way for so So so long. I did not try her suggestion with potato since I did not have them today. Soon posting this taroroot recipe in this space. Watch for it.

yes offcourcse after the potato gets correctly boiled(not too soft or hard but correctly cooked)..you can peel its skin slice it...in the mean time make the oil ready for frying on the stove...n immediately you can fry it...i watched it from my mom...who in the morning makes puri n kelangu(boils extra potatoes than required)...stores the extra boiled potatoes in the fridge n makes french fries for my kids in the evening..its really crispy...yeah even i've noticed in shops where they soak sliced potatoes in water for beign crispier...this type of boiling potatoes is my moms idea i guess...

hi meena guess its a long process to taste crispy finger chips...my way of it is very simple...cook the potatoes in cooker...after whistle simmer for 3-5(depending on the size)minutes...peel the skin ....size it...fry it..season it...taste it...its tooo crispier...warning:dont over cook the potatoes...you can also cook upto 10 potatoes on a time n store it in fridge for more than 10 days..n use it as required...

I have few questions. Can I slice them and fry immediately once they are taken out from the cooker?
The idea of soaking them for hours in water: flashback again years back.... there are many mixture shops (snacks shops) in Madurai. Whenever my mom and I used to wait for town bus we used to see near these mixture shops a big tub full of water where they soak potato slices. Once when we inquired about it to the shop keeper, he said, it is for potato chips. Seems they soak it for 5 to 8 hours in water mixed with turmeric powder and then fry them. Dont know what process these shops follow today.
But your tip is like a true fast-track french fries. Sure going to try them in a couple of months. Your tips are great girl!
