I've done it for bands. It doesn't take very long. And if fans are willing to meet a band without being charged additional for a M&G, they'll do it without fail. It takes a few minutes if people know how to follow directions.

A few other bands do sign ups. You send your name (and fansite username if it's a VIP fan club) to an e-mail address. In the subject, you have them put what show they're attending (that way you can easily sort them). Cap the number of people who can do the M&G (50, 75, 100 max depending on what you feel like, I know it's hard to disappoint). Usually, they limit it to one or two M&G per fan per tour so you don't have the same 40 people showing up at each one and taking up spots for fans who've never met you. From the email list you've generated, you have them bring a photo ID and check in before the show. They get wristbands or sticker badges and are told where to go for the M&G either before or after the show so it limits who sticks around and where. Security peeps are usually cool if a small group of people stick around for signings.
