Just as you don't want salmonella in your spinach, you don't want to buy bread made in a home that does not follow rules for sanitation or prevent cross-contamination. By choosing to set up a business without following food safety laws, he could hurt other small businesses who spend the extra money and effort on doing so. Other bakers allow inspection, follow the rules, and spend extra money on necessary steps for food safety.
