The cashews give the recipe that creamy, rich texture that makes it so similar to mayo.  If you're going to replace them, I'd probably go with macadamia nuts, but those are very hard to find and very expensive. I have a feeling, though, that if you let them marinate for a bit in a sauce (like the chana masala one),  they'll taste much better.&lt;/p&gt;&lt;p&gt;My favorite thing to do with sprouts is to make a sprouted black-eyed peas salad.  Just sprouts, olive oil, salt, pepper, some cilantro or parsely, and some sliced tomatos.
