This is based off how Aaron Franklin of Franklin's in Austin does his ribs. Of course, he has a real smoking vessel with aged oak. I tried to convert it to pellet as best as possible. It sounds like you might actually want to use the high smoke setting if the smoke flavor was too light. Every time I make this recipe (including last Friday) I'm always tinkering with it to achieve perfection. If the ribs were dry, try spritzing with apple cider and/or squirting with the sauce mixture again during the cook. The last 2 batches I did :30 in foil face down, then :30 face up to help let the juices settle back in. I usually spritz the foil before putting the ribs in for a total of two times spritzing.&lt;/p&gt;&lt;p&gt;From there you can remove from foil and rest then serve, or remove from foil and sprinkle a bit more seasoning on and smoke another :20. Put a toothpick in to see how test doneness. I've been seasoning after foil (lightly) lately like finishing salt. It adds a little texture. I was taking classes at PSU and happened to meet the AD one night in the design department. He found out i was one of the designers of the Denver Broncos logo, and was the designer of the Oregon 'O'. So, he asked me to do the project pro bono.&lt;/p&gt;&lt;p&gt;The logo represents lightning coming off Thor's hammer. As legend would have it, Thor would 'scrape' his hammer across the sky causing lightning to come from it.&lt;/p&gt;&lt;p&gt;No idea who or what a Buffaslug is.
