So its either free....or $100. Crazy, nothing in a reasonably priced middle ground. Used Espresso for years and love it, but since it got taken over by Warewolf it no longer works on my machine. And $99 is too steep for a text editor. I'll try some of the free ones you mention - cheers - and hopefully they are not too crappy. I use TextWrangler in a pinch but I'm a baby coder and need lots of hand-holding (like tag completion etc that Espresso does well)

Well I followed your time and temp recommendations and when it was time to remove the sirloin from the bag I checked with the meat with a thermometer as you suggested. Lo and behold the meat was a tender pink throughout, and after a quick splash on the griddle to brown up the edges, it was a delicious piece of meat. It’s quite a different flavour. Now I know I can trust the math, I’ll be more comfortable in the future. I was worried I was going to ruin four generous cuts of sirloin. I’m looking forward to other meats cooked this way now. Thanks for your advice and guidance.

Thanks for sharing the info as I am trying to follow along preparing my first attempt at soups vide sirloin. However one thing I feel is missing is how one knows when the food is cooked. Using traditional methods it’s easy; once the juices run clear, or when the internal temp of the meat reaches 140, it’s considered ‘done’ and safe to eat. Not one article I’ve read today talks about how to tell when the food is safe to eat. It’s all very well using time and temp math, but surely there’s a way to tell beyond blind trust in the numbers?

I think you are missing the point. When designing any of your own collateral its your opportunity to express your own creative identity. Doing what others want is what we do for clients. Expressing our style with materials like resumes and personal branding is a chance to show others what we are made of, what they can expect from us. If they respond in the negative then they are not a good fit. You have weeded out an employer you wouldn't want to work for. Those who respond positively will likely appreciate the other skills you bring to the table

Well what I ended up doing was downloading the ipsw file and loading it in manually. Option-clicking on Restore button in iTunes allows you to choose the firmware of your choice. So I am all good and back to normal. Thanks.

Well I was able to get past the passcode using iFunBox to delete the Keychain data. I sill cannot Restore my iPhone. Whenever I go into Recovery Mode, it is the Cydia/Pwnage Recovery screen with the cartoon Steve Jobs. This is likely whats creating the problem.

The error was the line in quotes in my first post - “cannot connect to the iTunes Update Server as I do not have enough access privileges” Error code −5000 (not one listed on the Apple list of error codes BTW)

Hi Gautam, I am trying to Restore my jailbroken iPhone (its an old first gen I have laying around I want to give to my son). It is locked with a passcode that I have long since forgotten. Entering Recovery Mode and trying to do a Force Restore fails because the phone “cannot connect to the iTunes Update Server as I do not have enough access privileges”.

Any ideas how to get around that little gem.

Well, a few weeks ago I was in just this situation, and had you seen me I'm sure you would have come to the same conclusion. Lots or zooming, panning, reframing. But the thing is, you would have been mistaken.

I had my main DVX100 camera front and center, following the action, pushing when necessary, pulling out when needed. But I also had a second camera (only a small pocket cam but at 1080p it gives me enough options in post, as has been suggested by a commenter) discreetly placed elsewhere in the auditorium. Are you certain this guy did not have a camera placed somewhere you didnt see?

Whenever I shoot, I always shoot to edit, so I know that when I reframe my main camera, I have b-roll for cutaway to keep the scene smooth and flowing. I was doing just this at my sons school recital as I was pushing and pulling the frame. Quite frankly, I dont know how to shoot video without editing, its such a crucial part of creating a show.

I agree about needing more than just one camera to capture an event, but disagree about the number, and the necessity for more operators. At least in my situation. Then again, I was asked by the school to offer my services as a favor, but families were not locked out of shooting their own.

General note, I dont think its fair to criticize a school for not having a budget for videography in these tough economic times. I'd prefer my kids school to be spending money on books, not on a second, third or fourth camera operator. That is way excessive in my opinion. For a Pink Floyd concert perhaps, but for little Jimmy's school play no.

Nice concise review. WSBK has been thrilling racing so far this year. Epic drama, rivalries, lots of passing, lots of surprizes. Hope it stays this way. So glad to see Melandri back on top. So many people had written him off before he even turned a wheel this season. He proved them wrong. He's a quality rider, I'm sure he's got enough motivation to stick it to Ducati after what the MotoGP team did to his confidence. No shrink need aboard the Yamaha. Disappointed we only got one Brit on the podium, pretty sad state of affairs after last years Silverstone. Tommy Sykes was looking really good until he binned it. Oh well.

The key comment here is "... while at the same time using less bandwidth and improving playback speed".

Considering the quantity of video uploaded per day, YouTube servers must be brimming at capacity and require constant upgrading. This phenomenon is not going to disappear so to reduce the bit footprint of these more amateur videos, the encoding will have to do a better job of removing unnecessary data.

A shot that is shaking all over the place puts an incredible strain on the encoding algorithm, and the decoding computer. This leads to either crummy looking video as the encoder struggles to interpret the fast-moving pixels, or to larger file sizes. By stabilizing the shot pre-encode YouTube will be able to save gigabytes of data, which in the long term will save them money.

Its a great move, and a great addition to the arsenal of YouTube tools. Less skillful camera operators will get to benefit, but the pro's among us will likely not have much use. We're already shooting steady footage :)

I dont see this as a matter of if but when. It's a natural progression of where we are and where we have been and of the current trajectory of technological progress. I mean the iPhone can do HDR. The HVX200 can shoot at 60fps. Its inevitable that at some point HDR video will be a reality in prosumer models and your 72fps model sounds feasible enough. One thing we know is that processors get faster, RAM and storage devices get larger, and hi tech trickles down eventually. I'm less interested in when HDR will be in my future than when shooting RAW video will. That will be the first step to low budget videographers and cinematographers being able to capture greater latitude. Not enough to ccompete with film but close enough to make a difference.

One final thought, whilst higher frame rates have been offered by manufacturers the look created has not been received well by filmmakers and audiences. The film-look is still one of the most discussed topics on forums. Image degradation and slow shutter (compared to video) motion blur often added back in post to emulate good old film. It had a good run and its influence will be felt for long after its demise I think
