It's really really important to get everything on the oven heat-soaked before you put in the dough.&lt;/p&gt;&lt;br&gt;&lt;br&gt;&lt;p&gt;Yeast dies at 140 degrees. There is a delicate balance between getting that last bit of rise out of the dough, getting the crust to brown properly, and a zillion other factors.  Whoever wrote this article knows nothing about breadmaking.&lt;/p&gt;&lt;br&gt;&lt;br&gt;&lt;p&gt;=== author's response follows ===&lt;br  /&gt;&lt;br&gt;I bake break all the time.  Just adjust the bake timing upward and add a little extra yeast to the dough.
