How many of those have I fielded over the years? sigh.&lt;br&gt;Much like when one describes a wine as fruit forward and the consumer says, "Oh no, I only like dry wines".&lt;br&gt;With that response, where to start really?&lt;br&gt;I think balance has as much skin in this game as mouthfeel.&lt;br&gt;But the angularity you describe has much to do with American preferences for sweet, sugary flavors and a dislike for high acidity in beverages as a result. I had two red wines open last week for friends.&lt;br&gt;One was an unbearably oaked (to me) Cab Franc that mostly tasted of vanilla. Not sure I agree that the restaurant buyers are being 'duped'. I think many are playing it safe and asking for well known brands so they don't have to handsell every bottle or train their staff adequately. Also, the business model for many restaurants is to make outrageous margins on alcohol, it is standard for them to have a 2.5 or 3 times markup of wholesale costs.&lt;br&gt;But this is being challenged as American consumers become more wine savvy.
