I like to fry up my bacon pieces without oil, remove them, and leave the bacon drippings in the pan. To the hot drippings, I add my halved Brussels Sprouts and sautee them flat side down until they're brown. I then add some chopped garlic, salt, pepper, and a pinch of nutmeg. To deglaze the pan, I add about a third of a cup of white wine, like Pinot Grigio or Sauvignon Blanc, stir and cover the pan. After about 10 minutes, I'll uncover them, add my reserved cooked bacon pieces and a little more wine. When the wine is absorbed/evaporated, the Bacon Braised Brussels Sprouts are dairy free and ready to serve!
