I found this (and your blog) while doing a search for cornmeal waffle recipes. I was totally thrilled to find out I could use masa harina, because I have a giant bag of it, only use it for tamales, and only make tamales a couple times a year.&lt;/p&gt;&lt;p&gt;I modified this recipe by removing most of the citrus and the sugar, and increasing the salt a bit, turning it unto a savory waffle. I know it might sound kind of weird, but waffles are just as delicious topped with mushroom gravy or tomato sauce as they are with maple syrup!&lt;/p&gt;&lt;p&gt;I'm currently digging through your blog for more awesomeness. I don't really view them as competition at all, and love both of them pretty much equally. Here's why:&lt;/p&gt;&lt;p&gt;I go to Jelly Donut whenever I want a donut. They make absolutely the best cake donuts (the ones with sprinkles, coconut, etc) in the entire world--and I have had some amazing donuts in my time. To me, they are a comforting reminder of the sort of faded glory of San Francisco that I love so much, the places that live forever with no updating because they don't need it, because they are just THAT DAMN GOOD. Their donuts are cheap, and they always give you a free donut--even if you buy a single donut, you will get two. They have opened up especially for me a few times, when I was passing by at weird hours and they were inside baking. They really love their work and it shows.&lt;/p&gt;&lt;p&gt;I go to Dynamo Donut when I want a treat. Their donuts are expensive, but really pleasing to the senses, and very unique. Their donuts remind me of a dessert you'd get at a high-end bakery, but not so sweet or pretentious. Just sophisticated. To me, they represent the entrepreneurial, artistic side of San Francisco, which I also really love. They also always give me free donuts, because I always show up shortly before closing. They too really seem to put a lot of love into their work, and it too shows.&lt;/p&gt;&lt;p&gt;So, to me, it's not a question of competition or either/or. It's kind of the difference between La Copa Loca and Humphry Slocombe to me.
