in Gournal: A Linux Alternative to Windows Journal on Note Talkers
Using linux should only require something called a live boot cd, which boots linux straight from the CD. Ubuntu has one available.
Installing gournal should be a matter of :

apt-get install gournal
or
aptitude install gournal
