Wide screen FTW. I'm getting a 1440x900 px Ubuntu Dell soon. Of course, default application GUI configurations are all horrible, but maybe with you on a widescreen, non-firefox gnome apps will get the option to combine menu and tool bars?
Also note that having the current window title in the title bar /and/ window list is redundant. ..so I turned it off in title bars and made them half thickness.
Status bars can go die. I mean, status is great, but when it's all the way at the bottom, bah. I'd rather do without.
Also, the little arrow buttons at the end of scroll bars aren't needed, they just make things look ugly.
....with all my tweaking, I don't know if this still qualifies as gnome I've got here ^_^
