Actually, the menu should have small-print on the bottom of every page about taxes. They are not taxing you for the food which is why it is not mentioned in each dish. They tax you for dining at their restaurant. Had you taken that away and not eaten at the retaurant (if they allowed it), the taxes would be entirely different.
