Gabriella, Ryan, Thanks so much for doing such a wonderful job organising this event. I had been looking forward to attending but it exceeded my expectations ten-fold. I am so happy to have met so many wonderful people and to hear what they are all doing and their ideas and plans for the future. The Conference has been a great base for building future debate and for working as a cohesive group. Many congratulations.

Ryan, please - you do NOT go to an Irish pub for a "nice British bitter"!!. You go to an Irish pub for something Irish, like Guinness.

I've been a fan of Patxaran for years and, in my opinion, the comercially produced Patxaranes aren't anywhere as good as the home-made ones. The problem, of course, is that you either have to know someone who makes Patxaran or you have to make it yourself.
A trick I picked up a few years ago from a friend for serving the Patxaran at the right temperature:- always keep a few shot glasses in the freezer and serve in these glasses straight from the freezer.

But, I'm not clear what sort of makeover you're suggesting for finding a particular wine. Can you please expand a little?
