By the way, Penzey's is my favorite cocoa too.  If you have some on hand, you might want to try this pudding recipe.  It's simple and extremely good...the way pudding ought to taste.&lt;br&gt;&lt;br&gt;Penzey's Chocolate Pudding &lt;br&gt;&lt;br&gt;1 cup sugar &lt;br&gt;1/2 cup natural cocoa powder (Penzey's of course!) &lt;br&gt;1/4 cup cornstarch &lt;br&gt;1/2 tsp. salt &lt;br&gt;4 cups milk (any kind -- skim works too)&lt;br&gt;2 T. butter, softened &lt;br&gt;2 tsp. pure vanilla extract &lt;br&gt;&lt;br&gt;In a heavy bottomed saucepan, combine all of the dry ingredients. Over medium heat, gradually add the milk, stirring constantly. Bring to a full boil over medium heat. Leave at full boil, stirring or whisking constantly for 2 minutes or until thickened. Turn off the heat and add the butter and vanilla, stirring constantly to blend. Pour into a large serving bowl or individual bowls.
