Two and one-half gallons in a keg, 3 bombers.  I'm trying to force carbonate a keg for the first time.  I did 40+ PSI for about 36 hours.  Right now it's super foamy.  Maybe too much CO2.  We'll see if it integrates over the next day or so.  May have to start bleeding off some CO2.&lt;br&gt;The flavor (in the roughly 4 ounces doses I get from a foaming pint glass) is really good.  Quite tart… really more sour than I thought I'd get from this approach. Transferred to bottling bucket, then filled a 1.5 gallon minikeg before adding priming sugar.  It was about 4.75 gallons into the bucket. Added 2.6 ounces table sugar (based on Brew Friend calculator) after boiling briefly with 1/2 cup water in the microwave.  Filled 3 1L swing-tops, 4 .5L swing-tops, 13 12-ouncers and 1 bomber.&lt;br&gt;Somehow my FG reading was 1.020, when I'd had two previous readings of 1.016.  Something screwy about that.&lt;br&gt;The sample from the hydrometer jar was pretty good.  Maybe a hint of sulphur. It was far too dark and muddled for me, with a crazy bubbling, brown head.  However, tasting it now, it's bitter, but smooth initially.  There's a slightly medicinal quality to the nose.  Not off-putting, but there if you look for it.  It's stout dark, and really comes across like a Robust Porter or  stout.  The bitterness is pretty clean, and a good balance for the sweetness.  It was way out of whack towards the bitter initially. It's actually fairly tasty, now.  I'll never brew exactly this recipe again, but I'm certainly learning about the power of time to force change on a beer that may be too far off in a certain direction initially. This started as essentially "dessert," where I would end a meal with a pear or apple or banana.  But I have been allowing myself in mid-morning an apple and one again between lunch and dinner.&lt;br&gt;I kind of don't want to punish myself for having a bit of fruit... but it is not exactly in keeping with my resolution.  I forbade any snacks...&lt;br&gt;Also, I found myself once this week snacking while preparing dinner... as if somehow that counted against dinner.&lt;br&gt;But last night, during our weekly game session, the gang brought Oreos and I didn't have any.
