i disagree. they know the "recipe", i.e. the content of the play. they don't know "what it makes" because they haven't experienced the drama of it, just as when you read a recipe you don't know what the food will taste or smell like. you're failing my class.

i think it's more like, you can't always define what it is that you want, and then you see it and you just know.
in his case, he's saying that apple doesn't believe in focus groups or asking for consumer input, because he believes his products create need rather than the other way around.
