We've roasted chickens twice -- to feed friends but also because all that chicken stock is so good during these cold months. I'm actually going to post a chicken recipe in a few weeks. I am a fan of many plant-based proteins too -- I actually kinda love crispy tofu. I love how much you use your freezer! My freezer is a savior. I don't like to use nuts and grains directly from the freezer -- I cook so often and recipes are often best with room temperature ingredients -- but I like to squeeze as much as I can into the fridge and into the freezer if I'm traveling.
