Sure, you can access the individual bars with CSS selectors.

Each bar has two classes applied to it: "barflyBar" and "barflyBar[N]" (where [N] is the index of the bar in the chart: 0, 1, 2, etc)

So, as an example, you could access the 3rd bar like so: $('#my_chart .barflyBar2')
