As much as we like to glamorize the restaurant industry, food service margins are basically nothing after the costs of labor, rent, permits, taxes &amp;amp; doing business in SF, and food inputs. It's because of the high cost of these inputs that most restaurants aren't profitable and fail, and most people in the industry (celebrity chefs excluded) aren't making much more than people who work at actual charities/nonprofits.&lt;/p&gt;&lt;p&gt;The SF Vegan Bakesale, as a "podunk operation" doesn't have any *overhead* - it's all donated. So the contributions aren't really analogous. The amounts donated might seem small in the abstract, but I bet they're generous compared with the profit margin. (Also Vegansaurus got the inside skinny on the Vegan Mission Burger profit margins, which were actually negative, so the common sense argument doesn't really apply, since common sense would call for not losing money.)&lt;/p&gt;&lt;p&gt;That said, MSF relies heavily on the "for charity" image, but doesn't really function with the procedures and transparencies of a non-profit org, which I think is one of Laura (the nonprofit soldier)'s criticisms. If you're functioning as a restaurant or catering company, that's a different thing than a "charity."
