Powdered milk and powdered eggs worked great. Recipe used both wheat and white flour. Shared with friends and no one knew that they had substitutes in them.
Thanks for the Challenge it really put us to the test and helped us think about how prepared we are. We have set some goals for improvement. Thanks for all your hard work also.

Re: The 7 Day Challenge: Day 6 (MONDAY)

Healthy eating is not so hard for me since I enjoy the food and how it makes me feel. I made oatmeal for breakfast, had scrambled egg substitute (I freeze several cartons of eggbeaters), V-8 juice. Lunch was leftovers from Sunday Dinner. For dinner we had pinto beans that I had put in the crockpot before I left for work this morning. I highly recomend using the slow cooker, it is nice coming home to a meal ready to eat. We put some seasonings in the beans and ate them with wheat bread. Yummy and good for you too!

Re: The 7 Day Challenge: Day 5 (SUNDAY)

In these type of situations where we are not shopping or spending money it is nice to be able to go to the pantry or freezer for fruits and vegetables. If there is something I would stock up on even more, it would be a variety of both. We had steak and potatoes and actually a pretty nice meal using stored foods. Our son is going to help me back up the computer, we have not done that yet. Good Challenge to keep us thinking.

Re: The 7 Day Challenge: Day 4 (SATURDAY)

Today seemed peaceful without the noise of the tv and other entertainment devices. The bread turned out great, I have 4 loaves of whole wheat bread on my counter. I tried a new recipe today, we liked it. I think I will give away a loaf.

Re: The 7 Day Challenge: Day 3 (FRIDAY)

I made a one dish meal since I had little time after a long day at work. We also had cornmeal muffins which are easy to make and take little time to bake. Finished the meal with raspberry jello and whipped topping. Easy but yummy.

Re: The 7 Day Challenge: "last few hints"

I am excited for the challenge.
