<rss xmlns:atom="http://www.w3.org/2005/Atom" version="2.0"><channel><title>Disqus - Latest Comments for kathybeachy</title><link>http://disqus.com/by/kathybeachy/</link><description></description><atom:link href="http://disqus.com/kathybeachy/comments.rss" rel="self"></atom:link><language>en</language><lastBuildDate>Thu, 17 Sep 2009 09:59:02 -0000</lastBuildDate><item><title>Re: The 7 Day Challenge: Day 7 (TUESDAY)</title><link>http://69.89.31.135/~foodsto1/2009/09/14/day-7-tuesday/#comment-16810318</link><description>&lt;p&gt;Well, here are a couple of my favorites:&lt;/p&gt;&lt;p&gt;Cheap Meat Loaf&lt;/p&gt;&lt;p&gt;1/2 lb ground beef (I have also used ground turkey)&lt;br&gt;1 cup cooked &amp;amp; mashed beans (any type)&lt;br&gt;1/4 cup oatmeal&lt;br&gt;3 Tbls mayo&lt;br&gt;1/4 of a large onion chopped fine&lt;br&gt;1/4 of a green bell pepper chopped fine&lt;br&gt;2 stalks of celery chopped fine&lt;br&gt;2 large carrots - grated fine&lt;br&gt;Mix all together with hands until well combined.  Shape in bread pan.&lt;br&gt;Bake 350 for about 45 mins.  Pour about 1/2 cup tomato sauce over&lt;br&gt;top &amp;amp; put back in oven for another 30 mins or until done.  Let cool in &lt;br&gt;pan 15 mins before removing.  If it falls apart, mix with gravy and pour &lt;br&gt;over mashed potatoes &amp;amp; tell your family you made it that way!&lt;br&gt;(Grandma used to tell me this was the best way to use up leftover &lt;br&gt;vegies too.  She used to put corn, peas, green beans, broccoli; well chopped or pureed- whatever was left in fridge)&lt;/p&gt;&lt;p&gt;1 Egg Cake&lt;/p&gt;&lt;p&gt;1 3/4 cup flour&lt;br&gt;2 1/2 tsp Baking Powder&lt;br&gt;1/2 Tsp Salt&lt;br&gt;1/4 cup shortening (original recipe called for Lard)&lt;br&gt;1 cup sugar (I've used Splenda with great success, Grandma used to use honey, just add more flour)&lt;br&gt;1 egg - unbeaten&lt;br&gt;1 tsp Vanilla&lt;br&gt;2/3 cup Milk&lt;br&gt;1 Tbls Applesauce (I've used pumpkin and pear sauce too)&lt;/p&gt;&lt;p&gt;Cream shortening till soft, add sugar gradually blending well.  Beat in egg &amp;amp; vanilla &amp;amp; applesauce.  Sift all dry ingredients together then add, alternating with milk.  Beat smooth after each addition.  Pour batter into greased &amp;amp; floured pans.  Bake 350 for 25 mins or until done.&lt;br&gt;Frost or leave plain. &lt;/p&gt;&lt;p&gt;Sister Virginia's Daily Loaf&lt;/p&gt;&lt;p&gt;Makes 4 loaves of bread!&lt;/p&gt;&lt;p&gt;1 pk dry yeast&lt;br&gt;1/4 c warm water (105-115 degrees)&lt;br&gt;2 cups scalded milk&lt;br&gt;1/4 cup sugar&lt;br&gt;4 tsp salt&lt;br&gt;8 Tbls lard or shortening (scant 1/2 cup)&lt;br&gt;2 cups water&lt;br&gt;12 cups flour&lt;br&gt;1 T melted butter (to brush on tops)&lt;/p&gt;&lt;p&gt;Dissolve yeast in warm water-whip briskly to hasten action-set aside in warm place.  Scald milk in large pan, remove from eat, add sugar, salt &amp;amp; lard.  When lard has melted, add water &amp;amp; allow mixture to cool to lukewarm.  Pour yeast mixture &amp;amp; stir well with wooden spoon.  Mix in 4 cups of the flour &amp;amp; beat 100 strong strokes, until batter is smooth.  Continue adding flour, working in well.  Dough will form ruff ball.  Turn dough onto well floured board &amp;amp; knead for 8 to 10 mins.  Return dough to well greased bowl, turn the dough over in the bowl so all sides are greased, cover with clean towel &amp;amp; let rise in warm place 1 hour until doubled in size.  Punch down &amp;amp; if time allows, let rise one more time.  After punching down, divide into 4 parts &amp;amp; shape into balls.  Cover &amp;amp; let rest for 15 mins.  Use this time to grease 4 pans.  Flatten 1 ball at a time in to rough rectangle &amp;amp; fold lengthwise.  Stretch dough &amp;amp; fold into thirds, the ends&lt;br&gt; overlapping.  Flatten out &amp;amp; roll up like a jelly roll.  It should be about the length of the pan.  Place it in the pan, seam down.  Repeat with each ball.  Brush top with melted butter.  Cover &amp;amp; let rise in warm place until slightly higher than pan.  Cook 350 for 35 mins.  Turn out onto racks as soon as it comes out of the oven &amp;amp; allow to cool before cutting.&lt;/p&gt;&lt;p&gt;I have used powdered milk &amp;amp; powdered eggs as substitutes with success.  Grandma lived on a farm during the depression between WWI and WWII, so she never had any problem having eggs or milk for her family. We had a wonderful time trying out all our disaster supplies and finding out what we will need for future emergencies.  I was tickled pink to see that I won a Dr Kno CD.  Can't wait for it to come. I did make sure to have the menu set up for husband &amp;amp; daughter before I left for hospital.  I'm not sure I'll be able to eat dinner.  I may be too doped up to remember anything until tomorrow.  However I am really loving these tests. We only have the supplies we came with for everything we need for the 3 days we're here.  We do have access to a public washroom (but, it is free).  Couldn't make bread, but we made do with extra hot dog buns we brought.  We walked from our campsite to the pet beach with the dogs &amp;amp; enjoyed the surf and collected seashells.  Tonight we will sit around the campfire &amp;amp; roast hotdogs.  Who needs electricity to have a good time!?!&lt;br&gt;Thanks again for these challenges. I would start with homemade tortilla &amp;amp; cheese rounds with (fresh from the garden) Basil leaves, sliced into wheels &amp;amp; grilled on bbq.  (Dinner would have meat, because we are meat eaters.)  Smashed potatoes with thick gravy - one with &amp;amp; one without meat.  Broccoli with cheese sauce, Green beans with onions and a fresh garden salad.  Dessert would be brownies with strawberries.  Everything would have been cooked on either the bbq grill or on the propane stove/oven.  Everything would have come out of my food storage pantry or my garden.&lt;br&gt;I will continue to follow the challange, even though we will be camping - which by the way - all the foods we take camping comes from our freeze dried food storage. Must have been something I ate or drank from yesterday's challenge.  Tomorrow I will have to go over what I put in my 72 hr pack to be sure everything is ok.  &lt;br&gt;I also keep rubber gloves in my ER pack along with masks - just in case.  We found Pepto in tablet form &amp;amp; keep that along with Tums &amp;amp; Imodium.  Much easier to keep tablets than liquid.&lt;br&gt;Anyway, really enjoying the tests.  Very glad husband talked me into keeping extra soda in our pantry.&lt;br&gt;Keep up the great work. Hubby leaves at 5am, so after calling my husband &amp;amp; texting my daughter, I headed out to the pop up tent trailer.  We keep it fairly stocked with canned foods &amp;amp; water.   We figure it only takes a minute to hook it up &amp;amp; go.  I had no car to leave, so just me &amp;amp; the 2 dogs spent the day in he trailer.  We took lots of walks  - keeping 2 Jack Russel dogs in a small space would be like keeping 4 kids in one room.  Anyway, hubby &amp;amp; daughter got home at about the same time &amp;amp; I already had supper started on the propane stove.  Kept my sanity by listening to a hand crank radio &amp;amp; quilting.  Learned that we never put summer clothing in our 72 hr packs, so we fairly roasted in our sweat pants!  Will have to remember to change clothing when we update food supplies (every 6 months-same time we change batteries in smoke alarms).  Must say, all in all, showed us that we really are mostly ready for anything.
