I have a dessert I make - not original - to take to pot lucks that is fast, easy and never has left-overs. It only has 4 ingredients and I usually have them on hand. It uses 1 % cottage cheese, light dream whip, lite jello and fruit. I will have to use canned mandarin oranges for this because I ate the last of the fresh raspberries for breakfast yesterday.

YEAH, I'M DONE!!!

Thank you so much for all your work on these challenges. I have really enjoyed them and learned a lot. Last Sunday I asked the Bishop if we had a Preparedness Specialist because we need to be doing "stuff", and he said he would check into it. I'd love to have us do this challenge as a ward.

Thanks again.

Re: The 7 Day Challenge: Day 6 (MONDAY)

This was a good one for us, too. I have high cholesterol - a family legacy - and diabetis, so this is our life. (No high blood pressure, but we watch our salt as well.) Breakfast was granola and fresh raspberries with skim milk. Lunch was tuna sandwhich on 12 grain bread - lemon pepper instead of salt, with carrot sticks and V-8 type juice to drink. Dinner was Adzuki Bean Hotpot with celery, parsnips, sweet potato and tomatoes. Snacks are finger foods like raisins and nuts.

Re: The 7 Day Challenge: Day 5 (SUNDAY)

This was an easy one for us. Although we live in an area that is VERY unlikely to have an earthquake, we would be OK in this situation. We have plenty of potable water stored for several days, and other water we could use for washing and cleaning. We have a variety of cooking options from camp stoves and backpacking stoves of several kinds and fuels to dutch oven cooking on the fire pit in the back yard - my DH is a pro at that, including desserts. We have many options for food as well. We also have a variety of tents and camping gear we could use. Besides this we have a motorhome in our back yard that would provide all the facilities we would need even if we couldn't drive anywhere due to the roads. (We would have to clean it out, though, because we are in the process of moving and are using it for storage right now;-)

TIP: One reason we have all this stuff is because my husband and I , now in our 60's, have spent many years working in the scouting program both as youth leaders and as trainers. Are your kids in scouts? If so, do they have good survival/camping skills? If they don't you need to talk to your scout leaders and find out why - and encourage them to work on this. You might be amazed at what kids can do. Thanks, Debbie for telling us about your son!

We have lots of games and good books to read to keep us and others entertained.

We do have a shovel in our car along with other basic tools and emergency items, but this shovel would not move large rocks on the road.

Now the confession - we don't have either of our computers backed up - we'll get on this right away:-(

Re: The 7 Day Challenge: Day 4 (SATURDAY)

Used to this one - we lived in the mountains for 4 years where the power went out all the time. Since the water required pumps in the wells for delivery we wouldn't have any water either. Have lots of drinking water on hand - a buchet and the creek take care of the toilets - you only flush when there's lumps - sorry, I know that's gross.

Re: The 7 Day Challenge: Day 2 (THURSDAY)

This has been a fairly easy day for us. There is only my husband and I at home now so no sick kids to worry about - no kids or grandkids living nearby. We had all the medicinal supplies we need, but perhaps not for 7 days. We have freezies (for the Gkids visits) and juice pops in the freezer and clear soups- all great for nausea, but could have used gingerale and fresh crackers. We used some left over packaged crackers from packing our 72 hour kits about two years ago to put in our soup today and they were gross!! and ruined the soup. This led me to open the crackers in my 72hr kit to check them out. We had vacuum-sealed everything so I wanted to see if they lasted any better. They were not as bad as the others, but they definitely were stale. Foil wrapped items such as fruit roll-ups and chewy granola bars were better. Another word on vacuum sealing - It makes everything smaller and water proof like clothes and toilet paper (let your kids watch you seal everything - it's very cool - our favorite was the TP.
