Unless you really see yourself dating this girl exclusively, I wouldn't go to dinner with her parents. Otherwise, you are just sending her the wrong messages. It sounds like she is really starting to like you, enough to want to wait a little bit to have sex with you, so unless you see yourself clearing the deck for this girl anytime soon, I wouldn't go.

I'm not convinced she likes you because you treated her "like a dick." I think she has a lot of fear and when you called her out, you came across as confident and made her feel comfortable...made her feel like you could handle her and you kind of caused her to come out of her shell and ditch her insecurity. I'm not saying she doesn't have her issues, but I don't think you were being an asshole...I think you were standing up for yourself...and that is attractive.
