Why do you use the flax seed? Is it a binder like gluten? If so, could you substitute xantham gum?

I bought from Vlad during the original Kickstarter campaign. He provided excellent customer service and because I live in Manhattan and he is in Brooklyn, he hand delivered the cars to me on Christmas Eve just so I could put them under the tree for my girls.
