Sorry, I forgot to clarify this: We would prepare the boards with color and black ALREADY PAINTED ON IT ahead of time with clear instructions posted or written into the board.

What if instead of having the people spray paint you still used big foam boards that were black... [ok hang with me here]... There is a art technique that is used in elementary schools where you have the kids color on a piece of foamboard with crayon or marker or whatever and then you paint over it with a mixture of Laundry detergent powder and black dry tempra-paint powder so that the black paint covers all the colors but you can scratch-it-off revealing the colors beneath. So its "reductive" painting as opposed to "additive" painting.

This looks really cool because yo have no idea what color you will reveal but it totally POPS off the black paint surrounding what you drew.

All that to say instead of risking the spray-paint you get the same idea with this, the same "wow" & "cool" factor, and they could contribute in a creative way.
