I gave more full instructions on this blog post! http://yourthrivelife.com/2... You will always need to boil water in a big pot since it takes 9 cups. Then you would pour the contents out of the jar (or bag or whatever you packaged it in) and cook into tortellinis are soft. It usually takes about 15 minutes. Hope that helps!

I consider it shelf stable because the ingredients are shelf stable. I would say they would last cooked on the counter for a week or so with no problems though. Just like cookies or any other similar baked good.

I couldn't find you in our email system. I think there is a problem with earthlink addresses because I tried to add you and it wouldn't let me either. You could try just using a free gmail to get them or just check the blog each day. We post them at midnight the night before!

It's definitely a concern. That's why we recommend to keep it in a small portable safe. You could also make digital copies of it all and keep the actual documents in a safety deposit box. Everyone seems to have a different preference for how they feel most comfortable. Thanks for your comment!
