They had to substitute a lot because of the rationing but they figured out how to do it. I would like to know some of those tricks myself.

Re: The 7 Day Challenge: Day 7 (TUESDAY)

Hi Julie and Jodie;

Did I miss the last of your emails? I am the preparedness specialist in our ward and I am going to talk to our Bishop too. There is so much to be learned here and you girls done such a fantastic job. One soft for my hubby and mine with apples and celery. Used Orange jello for his with pears from my shelves downstairs and fresh apples and celery in lemon jello for me. Yummy. My family member can take their pick :)

Re: The 7 Day Challenge: Day 6 (MONDAY)

You may want to do some serious reserch on Aspertaim. I bought some from Emergency Essentials and also from Honeyville store. I use them a lot. I put them in my home made bread too. They seem a little spendy at first until you realize how many eggs are in that can, and 2 tablespoons full makes 1 extra large egg.

Re: The 7 Day Challenge: Day 6 (MONDAY)

My batchler Son was diagnosed diabetic a few months back and Mom had to help him figure out menu's for a while.

I cook nearly all of our meals from scratch. Seldom ever use a packaged anything except cake mixes and that is just for convience. Don't use a bread making machine either. I learned to make bread in a dishpan and I still do. Can even bake it in an Apple Boxd oven. Beans and Rice are a regular around our house and lentil soup makes a real good lunch. I put veggies in just about everything I cook and keep plenty of dried celery leaves on hand because I use(eat) lots of celery and save all the leaves and dry them myself. Have dried onions, green peppers and carrots too so throw them in everything. We do eat quite a bit of sugar for breakfast as a rule because we like whole wheat pancakes and home made jam or jelly. Also like the french toast made with my homemade bread and dried eggs. Right now we are enjoying all the fresh produce and fruit so we are getting more than 5 servings a day some days that's about all we eat. Winter time is a different story tho and I do have to watch and make sure I have those things in my storage that wil help me put 5 servings in the menu. Will have lots of squash stored and corn in the freezer which will help. Lots of canned tomatoes and green beans too. So we should be good to go. Oh yes another thing we eat lots of especially in winter is pickled beets and apple sauce. Both home canned of course. :)

Re: The 7 Day Challenge: Day 5 (SUNDAY)

I had some questions about this one. Did the earthquake happen early in the morning or while we were at Church? Did I have water to get ready for Church? No biggy, could handle it either way. I pretended we were on our way home from Church and found the road block and finally found our house in shambles. My CERT training kicked in and I wouldn't let anyone in till it had been checked out for safty. Then we went in and secured the roof as best we could where the beams had come down. Got out what we needed and went to our "bug out place". Our camper. I don't trust any structure that has beams coming down on the computer. Our camper is parked a safe distance from the house so it was not damaged. Fired up the generator for power to keep the freezer going. Had plenty of propane for the camper, if we don't have to use it for heat, to last several days. A small shovel in the trunk of the car isn't going to do much good at clearing a slide across the road with large rocks like you said, but it may help us get around the slide. I agree the CERT back packs should be in the car at all times for times like this. Cooking for us was no problem because I keep the camper stocked with utensals and try to keep the propane tanks both full. In summer even keep the water tank full with silver to keep it fresh enough to use. Our food storage is in the basement and I just hope we were able to get to it. If not we may be in real trouble. but we have more than one way to get in so think we would be alright. Not sure how the glass canning jars would fare in a large earth quake. got to get some protection across the front of the shelves so the jars won't fall off. Haven't done that yet. Sorry to loose my brand new computer and my backup was in the desk drawer so don't know if it would have survived. From now on I will put the back up of all that geneology in the strong box. Entertainment for us, hubby and I wouldn't be a problem either. At that point just give us a pillow of somekind and a safe place to lay down and we will be just fine. Both over 70 you know doesn't take much to entertain us.

Re: The 7 Day Challenge: Day 4 (SATURDAY)

Ladies, how come when I try to pull up the callenge for Sun all I get is a repeat of the Sat. I have a calling that required me to be on the computer today and I was in the middle of a big canning project and just Thanked the Good Lord that my water was not turned off today. It did make me realize that maybe we should have more water stored for use in the bathrooms though. We have plenty stored for drinking and cooking, but all in small containers. We could last a week or more that way. But would have to fall back on our self contained camper for the toilet facilities. We have the powder to use there and a small amount of water each time to keep the vessel clean. As far as doing something with my family today. Not!! By the time canning was done it was time to fix a quick supper and get ready for the Saterday night session of Stake Conference. Just got home and filled out the questioneer and it is 9 PM too late to play games or anything else.

Re: The 7 Day Challenge: Day 3 (FRIDAY)

I love this one.

Made an appitizer of a relish plate with celery sticks, carrot sitcks, zucchunni sticks and thin slices of cheese and crackers. bowl of ranch dressing in the center for dipping.

Went to the garden for a couple med. zuc's, some fresh carrots, an onion. Went to my pantry shelves for powdered sour cream, freeze dried chedder and cream of celery soup mix. And I make up a big dish of "The Best darn Zuccunni cassarole Ever". I also need some stuffing mix which I don't have on hand so I cube some bread and sprinkle with poultry seasoning and toast in the oven for a few minutes.

Side dishes are green beans with onion slices and of course a nice big garden fresh salad of tomatoes, chard leaves instead of lettice, cukes and a baby zuc all chopped up together. If it weren't for guests I would also chop some onion in but will leave that out this time.

Dessert will be a "mock apple pie" made with zuc. slices instead of apples. No one will know the difference if no one tells them.

This sounds like something we would eat at our house any time during the summer. :)

Re: The 7 Day Challenge: Day 2 (THURSDAY)

Thanks, so maybe Cosco sells it in the Pacific North West, ya think?

Re: The 7 Day Challenge: Day 2 (THURSDAY)

How well I know that feeling. Hubby and I are both almost 75 and so staying home and eating cumfort foods is easy. Had plenty of TP and Paper Towels and have what it takes to make lots of soups real easy. Have homemade stew canned in quart jars so all we need to do is warm it up Yesterday we did come home to find out the basement was flooded you said. Now there we were in a bit of a pickle because we don't have a sump pump. Got the generator but no pump. Didn't think we needed one since there isn't enough water close to us to have a flood. Got drains in the floor incase of water pipes breaking. But we jumped in the car and went up on the hill to visit our daughter in law for a few hours to fulfill the leaving the house for 5 hours. It is what we would do if it really happened too. But keep up the good work girls it really does make one think of all the little details that the emergency would bring up.

Re: The 7 Day Challenge: DAY 1 (WEDNESDAY)

We needed to know if we could take the car when we left the house.
