I think the point is, relaying to a client that stands firm with putting ALL important content "above the fold" is getting them to realize that it isn't the way to necessarily go. The key is, just like the 37signals site, is to making sure the content and message flow smoothly and consistently, however long that may need to be, and not letting conventions dictate content.
