Because most of the time, it's sugar\processed food\being more aware of what you eat + Placebo effect and has nothing to do with gluten.
There's no good studies that shows that just cutting gluten off your diet made anyone (aside of people with Celiac) feel better in any way.

I'm really tired of this "gluten Free" craze. There's nothing wrong with Gluten or wheat for that matter. unless you have celiac disease, you can eat as much gluten as you like. Whole wheat and brown rice are better then white wheat and white rice because they have more fibers, not because anything to do with gluten.

As said, all this means is that people who eat those fruit have less of a chance to get diabetic then people who don't eat those fruits. It does not mean that if you'll add 3 servings of blueberries to a high sugar diet, you'll have less chances of getting diabetic.
