You can eat well, with very little time and on the cheap.&lt;/p&gt;&lt;p&gt;I see the whole "its expensive to be vegan thing" which kind of blows my mind. Fruits and vegetables cost WAY less than meat and cheese. You shouldnt rely on the processed meat and cheese replacement products for your subsistence anyway.&lt;/p&gt;&lt;p&gt;As for iron, eat more olives (they have more iron per 100g than ground beef) and spinach. Protein? Nuts and beans. Calcium? Broccoli.&lt;/p&gt;&lt;p&gt;Also, I'm not vegan but a vegetarian who eats vegan probably 90% of the time. Reducing the salt and processed foods in my diet has helped me regain more energy than I thought possible AND as a student who works a regular job (ie time constrained) I find it extremely manageable.&lt;/p&gt;&lt;p&gt;Time saving hints:&lt;/p&gt;&lt;p&gt;Take a day you are less busy and prep your week. If you like to keep snacks with you, pre prep some baggies of almonds or carrots to grab and go. I love trail mix for this as well.&lt;/p&gt;&lt;p&gt;Easy weeknight dinner: Stir fry. Chop veggies, throw them in the pan, make a soy sauce and PB mix, throw in, serve. Done in less than 10 minutes.&lt;/p&gt;&lt;p&gt;Im awful at breakfast too but find that bagels are super easy. Portable and has enough carbs to jump start your day's energy levels. Blueberry bagels also have the perk of antioxidants!
