First of all it's an "unscientific study" so who cares? Second, fat, salt and sugars are natural preservatives. Yeah, believe it or not before refrigeration that is how meats etc. were preserved. Anyway, as a writer the author should consider using the phrase 'Which means' only once and try and find another way to say it like 'it means'. It's distracting.
