It's one of my four go-to recipes to use up leftovers, although I often make it with non-leftover ingredients.&lt;/p&gt;&lt;p&gt;Grease the baking dish, or not. I did this time.  Preheat the oven to 350 degrees Fahrenheit.&lt;/p&gt;&lt;p&gt;Put cut-up vegetables or meat on the bottom - 2 to 4 cups. I had butter-sauteed leeks and fennel, plus chard with garlic leftovers this time. I added small-chopped carrots for color.&lt;/p&gt;&lt;p&gt;Cheese - a cup or more of grated cheese. I used Mexican blend. I like it better on top of the eggs, but I forgot to wait.&lt;/p&gt;&lt;p&gt;Eggs, beaten - 12 for a 9" x 13" baking dish. My baking dishes are a little bigger, so I used 14 eggs. You can beat in milk to lighten it up, but I don't.&lt;/p&gt;&lt;p&gt;Spices - anything you want. I used a couple of tablespoons of Trader Joe's 21 seasoning salute this time. You can sprinkle the veggies, or mix it with the eggs.&lt;/p&gt;&lt;p&gt;Bake 30 to 45 minutes or until it's as done as you like. I lined through some things I decided NOT to do.)&lt;/p&gt;&lt;p&gt;Also, I'm working with a physical therapist and a personal trainer (and on my own) to get my hip strong enough for the kind of dancing I like (which requires not leaving the set until it's done) and my knee strong enough to go down stairs comfortably. A friend of mine got a Kellogg Fellowship to study South African music back in the late 1970s, early 1980s maybe? She presented her results (one of the requirements) to the San Francisco Folk Music Club at our New Year's Camp.&lt;/p&gt;&lt;p&gt;In South Africa, the indigenous people sing a lot. For marriages, the brides family sits on one side of the field and the groom's family sits on the other side, and they have a singing contest to see who sings better and louder.&lt;/p&gt;&lt;p&gt;The men leave home to work in the cities and stay in dorms(?) because of aparteid. They form singing groups. My friend was asked to judge a singing contest. Since she didn't know any of the singers, she could be "objective and impartial." They seated her at the front with her back to the audience and where the singers would enter and sing, so she wouldn't be swayed by their appearance or choreography. She could hear the choirs jumping and stamping as they entered singing.&lt;/p&gt;&lt;p&gt;Everyone told her she had to go hear Ladysmith Black Mambazo. Ladysmith is the township.  Ladysmith Black Mambazo wasn't allowed to compete in the singing contests because they always won. There were few flyers, but none had the address. People were just expected to know. They were as good as their reputation.&lt;/p&gt;&lt;p&gt;My friend brought back tape recordings of all of these different kinds of singing to illustrate her presentation. So I became a fan of Ladysmith Black Mambazo before Paul Simon knew who they were. I'm pleased that, even though their leader was murdered by the police, they still perform. The theory is that using all 22 bones in my feet will make them strong and healthy.  It seems to work pretty well unless I quit moving. (Long list of things I've tried &lt;br&gt;omitted.) Finally, I hired someone to find someone to fix it. (Since that doesn't seem to be one of my skills.) He came up with two companies. The first one started giving me racist dog whistles-missing all the literal signs (two in my yard saying "In this house we believe...no human is illegal", one on my shirt -- Liberty with the "give me your tired, your poor..." poem!).&lt;/p&gt;&lt;p&gt;The second one is quite a bit more expensive. After I sent the second company a retainer check, they came out the next dry day and my roof doesn't leak anymore. No more buckets! They will totally re-do the roof in the summer, and I had to hire a painter to paint the stucco they will be replacing. Whatever vegetables I have, cheese, a dozen eggs, spices. Bake 40 minutes. It travels well.&lt;/p&gt;&lt;p&gt;Potlucks at my house (I host a group every month), I look at what others brought and fill in. Usually that's a salad or fruit. I also make the coffee and have milk and sweeteners for it.
