Vegan is a different journey for everyone.  Personally, when I stopped eating meat and dairy for health reasons, I became interested in, and later accepted the concept that animals are not ours to use as we please.  As people are waking up to enviro-veganism, it is a perfect opportunity for us to share with them about veganism.
