Among easily commercially available cheddars I like Trader Joes' English Coastal Chedder and the aged Kerrygold cheddar. Machego, mentioned below, is to some extent cheddar-like and is delicious, acquiring additional flavor from the sheep milk. Roquefort and other strong blue cheeses are great (they can really bring eggs alive). And of course a fine feta with a high milkfat content is great. Portugal has great runny sheep, cow and goat cheeses from controlled denominations that can be heated and used as a piquant dip. After a trip to Norway a few years ago, I also got a fondness for the the funky "brown cheese" enjoyed there with breakfast, along with a squirt of roe paste.
